We launched our artisanal cheese factory in January of this year. We are currently making and releasing three cheeses: a traditional very French-styled Camembert called "Madeline"; a Gouda called "Number 12" in honour of the original dairy license at Melville Park; and a cheese not commonly found in Australia, Caerphilly, a Welsh "crumbly cheddar-like cheese". The factory was built by rehabilitating the disused dairy and features a generous "making room" and three separate les caves d’affinage (cheese caves) for our different styles of cheese. Our philosophy focuses on making hand-crafted cheeses that express unique and memorable flavours derived from the evening milk of local grass-fed cows as well as cheeses that benefit from patient ageing in les caves d’affinage. Cheeses can be purchased at our Farm Shop (currently open Saturday mornings 9 to noon). You can also find them on the menu at Brugan in Wokalup and Mojo in Bunbury.
